Waffle Cheese Sticks

Frying cheese sticks makes a fair amount of mess because of the popping grease. You can eliminate that problem by making your cheese sticks in the waffle iron. Cool, huh?

Ingredients:
3 tablespoons flour
½ teaspoon paprika
½ pound mozzarella, cut into ½-inch thick slices
2 beaten eggs
½ cup bread crumbs
Cooking spray
Salsa

Preheat your waffle iron to medium. Mix the flour and paprika on a small plate. Put the eggs in a bowl and spread the breadcrumbs on another plate. Coat each piece of cheese in flour, then eggs, then breadcrumbs. Spray the waffle iron with cooking spray and fill it with as many cheese sticks as will fit. Close the waffle iron and cook for 1 minute. Repeat with remaining cheese sticks. Serve with salsa.

French Onion Cheese Sticks

If you ask me, the best part of a bowl of French onion soup is the lump of gooey cheese floating on top. Recreate that flavor with this outstanding cheese stick recipe. Everyone will love this, so make lots.

Ingredients:
6 slices bread
6 slices Swiss cheese, cut in half
6 slices Provolone cheese, cut in half
½ stick unsalted butter
1 teaspoon oil
2 sliced onions
1 can beef broth
2 tablespoons white wine

Salt and pepper

Directions:
Melt 2 tablespoons of butter with the olive oil over medium heat. Add the onions and cook until they are browned slightly and soft. Place two halves of Swiss and two halves of Provolone on each slice of bread. Top the cheese with a tablespoon of the onions. Heat 2 tablespoons of butter in a skillet and cook the sticks until they are golden brown on both sides. Serve the sticks with the reserved broth of dipping.
