Breakfast Nachos You don't have to wait until the afternoon to munch on some nachos. Make them into a morning meal by putting some eggs on top. It's the new breakfast of champions, so if you're going to follow any of these nacho recipes, make this one.

Ingredients:
2 Eggs
2 Slices of Bacon
1/3 cup shredded Colby-Jack Cheese
Corn Tortilla Chips
Salsa
Sour Cream
Salt and Pepper

Instructions:
Fry bacon until crispy. Crack eggs into skillet used for bacon and cook on low heat for 5 minutes. Place chips into bottom of a pie tin. Turn the oven to broil at 500 degrees. Remove eggs from pan and place on chips. Sprinkle half of the cheese and half of bacon onto egg whites, leaving yolk uncovered. Broil for 2 minutes. Remove tin, layer on more chips, and remaining bacon and cheese. Broil for 1-2 more minutes.

Popcorn Nachos Nachos don't necessarily have to contain chips of any sort. Why not try replacing those chips with some popcorn? It's still a delicious mixture, and it's something your guests probably haven't tried.

Ingredients:
1/2 cup butter, melted
1 teaspoon crushed red pepper
1 teaspoon ground cumin
1 teaspoon paprika
1 gallon popped popcorn
1/2 cup shredded Cheddar cheese

Instructions:
Mix butter, crushed red pepper, paprika, and cumin. Place popcorn in a large bowl. Sprinkle with butter mixture and cheese. Toss until mixed.

Ingredients:
1 package frozen waffle fries
10 bacon strips, cooked and crumbled
3 green onions, sliced
1 can sliced ripe olives, drained
2 medium tomatoes, seeded and chopped
2/3 cup salsa
1-1/2 cups shredded cheddar cheese
1-1/2 cups shredded Monterey Jack cheese
Sour cream

Instructions:
Bake fries according to package. Move to a 10 inch skillet. Top with bacon, onions, olives, tomatoes, salsa and cheeses. Place in over for 5 minutes. Serve with sour cream.

Skillet Chicken Nachos

Skillet Chicken Nachos If you want a bit of meat in your meal, add some chicken. It goes well with chips, and is easy to scoop up. Don't worry if you have any vegetarians present, because they can stick to eating the chips plain or doused with cheese.

Ingredients:
1 tablespoon olive or vegetable oil
1 1/4 lb boneless skinless chicken breasts, cut into 1/4-inch pieces
1 package taco seasoning mix
1 can tomato sauce
1 medium red bell pepper, chopped (1 cup)
1 can (15 oz) black beans, drained, rinsed
1 can (7 oz) whole kernel sweet corn, drained
2 cups shredded Mexican cheese blend (8 oz)
6 oz tortilla chips (about 42 chips)
1/4 cup chopped fresh cilantro

Instructions:
Heat oil in 12 inch skillet. Cook chicken for 3-5 minutes. Stir in taco seasoning mix, tomato sauce, bell pepper, beans, corn and 1 cup of the cheese. Reduce heat. Cook 3-5 minutes. Spoon chicken mixture evenly over chips. Sprinkle with remaining cheese and cilantro.

Basic Cheese Nachos You don't always have to go big. Sometimes, you'll be in the mood for regular old nachos. When the craving strikes, you can whip this up.

Ingredients:
1 pound cheddar cheese
Tortilla chips

Instructions:
Heat oven to 450F. Shred cheddar cheese. Spread tortilla chips on a baking sheet in an even layer, and sprinkle half of the cheese over it. Repeat with remaining chips and cheese. Bake for 5 minutes or until cheese is melted.

Apple Nachos Are you looking to eat healthier, but aren't sure how to deal with your dislike of fruit? Well, this recipe won't help your health, but it can certainly change your outlook on apples.

Ingredients:
36 caramels
1 tablespoon water
30 large marshmallows
1/3 cup butter, cubed
4 medium tart apples, cored and cut into 1/4-inch slices
1/3 cup chopped dry roasted peanuts
1/3 cup miniature semisweet chocolate chips
3 tablespoons Halloween sprinkles

Instructions:
Melt caramels with water in microwave. Stir until smooth. In a saucepan, melt butter and marshmallows. Arrange apple slices on a platter. Drizzle with caramel. Top with marshmallow mixture. Add peanuts, chocolate chips, and sprinkles.

Three Cheese If you're a lover of cheese, and can't decide which type to use, just use them all. This recipe combines cheddar, Manchego, and Monterey Jack cheese, because three is way better than one.

Ingredients:
Tortilla chips
2 tablespoons unsalted butter
1 jalapeno, minced
2 tablespoons all-purpose flour
2 cups whole milk
3 ounces sharp Cheddar, grated
3 ounces manchego cheese, grated
3 ounces Monterey Jack cheese, grated
Kosher salt and freshly ground black pepper
Hot sauce

Instructions:
Preheat oven to 425F. Spread tortillas on baking sheet. Bake for 2-3 minutes. Melt butter in a saucepan. Add jalapeño and cook for 3 minutes or until softened. Stir in milk and flour and cook for 3 minutes. Reduce to a simmer and cook for 7 minutes. Turn off heat and stir in cheese until melted. Season with salt, black pepper, and hot sauce. Drizzle over tortillas and serve.
