8. Blueberry Cucumber Salad

The combination of blueberries and cucumbers in this salad are a refreshing change from your average lettuce based salad.

You get loads of antioxidants and tons of fiber, all for very few calories and just a touch of fat.


1 cucumber, seeded and thinly sliced

2 cups fresh blueberries

2 tablespoons scallions, thinly sliced

2 tablespoons olive oil

1 tablespoon lime juice

1/2 cup cilantro or parsley, coarsely chopped2

1/4 teaspoon

1/8 teaspoon black pepper

1/2 cup feta cheese, crumbled


Toss together the cucumber, blueberries, scallions and parsley.

In a small bowl, whisk together the olive oil, lime juice, salt and pepper.

Pour the dressing over the cucumber mixture and toss to coat.

Top with feta cheese and serve.
