1. Tropical Avocado Salad
This might be one of the most delicious avocado recipes out there. The combination of flavors when you mix the avocado with the fruit creates a taste explosion you won’t be able to get enough of. This is the perfect summer salad, but it tastes delicious no matter what the weather outside happens to be.
Ingredients:
3 tablespoons lime juice
1 tablespoon chopped fresh jalapeno with seeds
1 tablespoon soy sauce
1 tablespoon honey
1 clove garlic, minced
½ teaspoon salt
¼ cup extra virgin olive oil
2 cups sugar snap peas, trimmed
½ a fresh pineapple, peeled, cored and cut in half lengthwise
1 large carrot, peeled and cut into 2-inch matchsticks
1 cucumber, peeled, halved and thinly sliced
2 cups shredded cabbage
2 avocados, peeled, pitted and diced
Directions:
In a bowl, stir together the lime juice, jalapeno, soy sauce, honey, garlic and salt. Whisk in the oil slowly. Bring a medium pot of water to a boil and cook the sugar snap peas for about 15 seconds. Transfer them to cold ice water, drain and thinly slice the peas into thirds the long way. Thinly slice the pineapple pieces. In a large bowl, toss together the snap peas, pineapple, carrots, cucumber and cabbage and toss with the dressing. Slice the avocados and add to the salad. Gently stir to combine.

2. Avocado and Beef Lettuce Wraps
This recipe combines a yummy mixture of healthy ingredients in a meal that will taste decadent. The ingredients are easy to find and the dish comes together so quickly you’ll be eating before you know it.
Ingredients:
¼ cup oil
1 pound low-fat ground beef
1 minced jalapeno
¼ cup chopped cilantro
¼ cup chopped green onion
¼ cup chopped basil
¼ cup chopped mint
2 whole avocados, peeled, pitted and cut into chunks
¼ cup lime juice
2 tablespoons fish sauce, optional
1 head Bibb lettuce
Directions:
Heat the oil in a large skillet and brown the meat over high heat until it’s crispy and cooked through, about 15 minutes. Stir in the jalapenos and cook for an additional 3 minutes. Remove the meat from the pan and toss it with the cilantro, green onion, basil, mint, avocado, lime juice and fish sauce. Serve the meat mixture in lettuce leaves.

4. Baked Tilapia with Avocado and Tomato

4 tilapia fillets, about 5 ounces each
2 tablespoons olive oil

1 ripe avocado, peeled and diced

Preheat the oven to 350 degrees. Line a baking sheet with foil. Brush the fish on both sides with a tablespoon of oil and put it on the baking sheet. Sprinkle the fish with half the herbs and half the salt. Bake it for 7 to 10 minutes, or until cooked through. Meanwhile, stir together the avocado and tomato in a bowl with the remaining oil, herbs and salt. Serve the mixture over the cooked fish.

Put the shrimp in a large bowl and add the garlic, red onion and cilantro. Stir in the tomato and clam juice cocktail, ketchup, lime juice, hot pepper sauce and the horseradish and season to taste with salt. Add the avocado and mix to combine. Cover the cocktail and refrigerate it for about 2 hours before serving.

Top with avocado slices, sour cream and salsa just before serving.
