Easy Entrees are a necessity in my house. After a long day of work and errands the last thing I want to do is spend my evening preparing a big meal for my family to eat. I’m always on the lookout for quick and easy entrees that I know my family will love. Here are a few of my favorite quick, delicious, and easy entrees that you will like too.
On the days I grocery shop, I pick a pre-cooked rotisserie chicken. I love these chickens. They have so much flavor and make two meals. The first night we eat the chicken with potatoes or rice and a vegetable or salad. The second night I use the leftover chicken in a soup. It's also quite easy to make rotisserie chicken, so you may want to give it a shot yourself.
Chicken noodle soup is an easy entree that uses left over chicken. In most cases the chicken is already cubed or deboned. All I have to do is cut a few vegetables. I like carrots, celery, and onion. I mix the chicken, wide egg noodles, chicken broth and veggies in a pot to simmer. Add season to taste as needed. This soup is usually done in less than 30 minutes.
Rachael Ray from the Food Network is amazing when it comes to easy entrees. I love her Mac and Cheddar Cheese with chicken and broccoli because it is quick and simple. The indgredients are always on hand and the family loves it.
I am such a sucker for chili. I could eat it every day. My favorite is to spoon chili on to a pile of corn chips and top with cheese. We like to call if Frito Pie in my house. Here is one of my favorite quick and easy chili recipes from the ladies at Moms Who Think.
Easy entrees don’t mean it has to be dull and boring or ordinary. In fact, I think this peppered shrimp alfredo from All Recipes is far from ordinary. I have made it several times for my family and company.
Here is another classic from Moms Who Think. I love this recipe because it is quick and tastes better than take out. It really hits the spot when I am craving Chinese but don't want to order in. Besides, it's a much healthier alternative.
If you are still aren’t using your slow cooker to make easy entrees, you are crazy. The best thing about the slow cooker is you can start your dinner in the morning and have it ready for dinner. In the mean time you are free to do what you please. This Cube Steak with Gravy from CD Kitchen is one of my family’s favorite crockpot dinners.
I just recently made these beef taquitos from Family Fun as an easy entree for dinner. Preparation and cook time was simple and easy. My family loves Mexican food so I was sure this would be a hit. I was right. I set out bowls of salsa, sour cream, and guacamole to dip our taquitos.
