I particularly love a good omelet in the morning but with so little time to cut and prep ingredients, I frequently turn to my favorite alternative—omelet muffins. Basically, you mix all of the omelet ingredients together, divide into a lightly greased muffin tin and bake. These are best keep refrigerated and warmed up before eating.

Frequently asked questions

2 Granola

My love for granola goes beyond words. I love how it is not only downright delicious but also super easy to make. An added bonus is that you may already have a lot of the ingredients used to make granola in your pantry! On a busy morning, a relatively easy breakfast is a quick parfait using homemade made granola, yogurt and fruits.

3 Baked Oatmeal

Like omelet muffins, baked oatmeal literally takes minutes to make and will store well for the week. It’s a great way to ensure you are getting a nutrient rich breakfast on the go. To keep it interesting, I like to change up the flavor combinations from cinnamon apple to peanut butter and banana. You can’t go wrong with a breakfast where the first ingredient is oats!

4 Smoothies

Nutrient rich smoothies are a great way to start the day. A quick and easy way to make smoothie in the morning, is to divide your favorite selection of fresh or frozen fruits/veggies into sandwich bags and freeze. In the morning, combine the pre-packed frozen fruits/ vegetables with the other ingredients in your smoothie i.e. yogurt or milk and you are set to go!

5 Muffins

The beloved muffin is one of my favorite make ahead breakfast foods. All you have to do is mix all the ingredients together, bake and store in an airtight container. To increase the nutritive value of muffins, I like to substitute all-purpose flour with whole wheat flour and reduce the amount of fat by substituting half of it with unsweetened yogurt or fruit puree. Whatever direction you decide to go in term of flavor and ingredients, the outcome is likely to be delicious!

6 Overnight Oats

I am new to the idea of overnight oats, and to be honest, at first, I was skeptical. However, after my first bite, I have to admit that I am hooked. These oats are not only super tasty but are healthy and filling. To make overnight oats, you simply combine and mix the oats, milk, sweetener and other flavorings to a jar/cup, refrigerate overnight, and in the morning you have breakfast!

7 Chia Seed Pudding

Chia seeds are a great source of essential nutrients, minerals, fiber, and antioxidants; and so the addition of these seeds to any breakfast meal is a great way to begin your morning on the right foot. Aside from adding chia seeds to my smoothies, muffins and granola, I also like to make chia seed pudding when I am craving something new, easy to make and healthy. As with most do ahead breakfast foods, chia seed pudding is easily prepared. Combine the seeds with your milk and sweetener of choice, refrigerate and eat at your leisure.

Do ahead breakfast foods are a great way to start off your morning with the energy needed to meet the demands of the day.
