Here is one of myself and my husbands favorite healthy dinner of all time! If you have some chicken breasts thawed out in your fridge, simply pop them into a skillet with some olive oil, salt and pepper. You can make some instant rice to go along with it, and maybe a few fresh veggies to munch on. This is a delish, quick, AND healthy dinner!
2. Perfect Paella
Skillet paella is a healthy dinner that you can make in no time at all! You will need chicken, shrimp, onion, rice, red bell pepper, Chicken broth, peas, seasonings and garlic. Season the chicken and shrimp and cook it with the veggies and the garlic. Then stir in the rice and chicken broth. Cover and let simmer for 10 minutes before serving.
3. Yummy Soup
Keep plenty of frozen or canned veggies on hand so that you can make this healthy dinner at a moments notice. You can choose the vegetables that you want, and then pop them into a pot with some salt, pepper and water or chicken broth. Let simmer for about 15 minutes before serving.
4. Fish Platter
Here is a dish I just recently tried and fell in love with! Fish makes a healthy dinner that comes together quickly. You will need fresh, thawed out fish of your choice. Cook it thoroughly, and then add it to cooked rice. Toss with parsley and lemon and salt and you have yourself a delish healthy dinner!
Salad may be an old standby, but it works! It's healthy, light, and quick. Get creative and add raisins, walnuts, egg, bacon, cashews, grapes, apples, spinach or whatever you like. It's good to keep a little cooked chicken in your fridge for times like these. You can chop it up and add it to the mix!
Pasta is one of my all time favorite healthy dinners! I love to toss it with veggies and cream of chicken sauce. Veggies that you can use include carrots, celery, spinach, red bell peppers and onions. You can cook them or mix them in fresh!
7. Vegetable Plate
When all else fails, you can fix yourself a huge plate of fresh veggies and fruits! You can also cook your veggies or steam them and add some seasonings. Vegetables are so healthy for you and easy to make, not to mention very budget friendly. And what a healthy dinner!
