Bored of your usual roasted, baked, poached or steamed chicken breast? Try this recipe for Crunchy Honey Walnut Chicken.
Why chicken and walnuts? Well not only is chicken a great low-fat food but walnuts are one of nature’s wonders. These funny looking wrinkly nuts are a superfood which is a title given to foods that are deemed to have health-giving properties above and above their nutritional content.
Don’t be put off thinking that this recipe is not low fat because of the walnuts. The amount used is not harmful to your healthy diet and the fats they contain are the good sort – unsaturated.
It’s impossible to list the benefits of walnuts here, so whilst your chicken is cooking, read up and be amazed and the humble walnut will be near the top of your future shopping lists. Don’t forget you’ve also got the lovely honey in this dish that adds great stuff to its nutritional value.
Preparation time: 10 minutes + 60 minutes chilling

2 shallow dishes
Baking tray
Ingredients:
6 skinless chicken breasts
1 cup honey
2 cups breadcrumbs (either white or brown)
1 cup finely chopped walnuts
Salt and pepper
Oil for greasing
Directions:
Mix together in a shallow dish the breadcrumbs and walnuts
Season with salt and pepper.
Tip the honey into another shallow dish.
Dip each chicken breast in honey then roll in the breadcrumb nut mixture until evenly coated.
When all 4 breasts have been coated put in the fridge to chill.
After 1 hour remove the breasts from the fridge and place into a lightly greased baking tray/dish
Bake at 175° for about 50 minutes or until cooked through.
Serve with crunchy steamed vegetables (try some fennel or asparagus) or with a crisp green salad.
