I hope you try this recipe for fig, apricot, and seed bites. Everyone deserves a treat now and then and these bite-size pieces are a little burst of low-fat flavour you can enjoy as a snack. Made from beautifully healthy figs and apricots, the nutritional value is boosted by the addition of seeds and also superfood oats.

Preparation time: 10 minutes

Cooking Time: 15 minutes

Serves: Makes 24

Energy: 107 calories per nibble

Equipment:

Large mixing bowl
Sieve
Flat baking sheet
Greaseproof / baking/ silicone paper
Wire cooling rack

Ingredients:

150g polyunsaturated margarine
75g light soft brown sugar
1 egg
2 tablespoons water
75g wholemeal flour
½ teaspoon bicarbonate of soda
100g rolled oats
50g dried soft apricots
50g dried figs
50g mixed seeds (pumpkin, sunflower, sesame)

Directions:

In a large bowl beat together the margarine and sugar until light and fluffy.

Lightly beat the egg then add to the sugar mix together with the water.

Sift together the flour and bicarbonate of soda into the mix. If there is any bran residue left in the sieve add it in too.

Chop up the apricots and figs.

Add in the oats, apricots, figs and seeds to the mixing bowl.
Fold in until well combined.

Line a flat baking sheet with paper.

Place walnut sized pieces of the mixture on the baking sheet and flatten them lightly with the back of a fork.

Bake in a pre-heated oven at 180° for 10-15 minutes until golden.

Cool on a wire rack.
