7 Summer Salads to Help You Slim down ...

As I work hard this summer to stay in shape, it is always fun to add variety to my healthy summer salads. Without variety in my meals I tend to get bored. And I love sharing these recipes to spread the word that eating healthy is fun and exciting by including meal creation creativity! Do you ever feel like switching up your meals? By adding different ingredients I am never bored of my meals and I am always eating healthy! I would love to share these recipes with you because they are all healthy and taste great! Here are some healthy summer salads that I hope you love.

Summer Tomato Onion Cucumber Salad

Summer Tomato Onion Cucumber Salad The summer tomato onion cucumber salad is ultra refreshing due to the high water content of cucumbers and tomatoes, especially in the summer. To prepare this refreshing salad it is super simple, and you can reap the rewards and enjoy when it is complete. This is one of my favorite healthy summer salads!

Ingredients:
1 tablespoon vinegar
¼ teaspoon oil
½ tablespoon honey
¼ teaspoon salt
¼ teaspoon pepper
2 cucumbers
15 grape tomatoes
¼ minced onion

Directions:
Whisk vinegar, oil, honey, salt and pepper in a large shallow bowl. Remove alternating stripes of peel from the cucumbers. Slice the cucumbers into thin rounds. Add the cucumber slices, tomatoes and onion to the dressing; gently toss to combine. Let stand at room temperature for at least 30 minutes and up to 1 hour.

Skinny Caesar

Skinny Caesar I love Caesar salad but without the high fat and calories, so I have a skinny take on Caesar that you will be sure to love. This is one of my favorite salads to serve when entertaining! Try it and you will understand why!

Ingredients:
2 garlic cloves
1/8 teaspoon coarse salt
1/4 pound rustic bread (half a small loaf ), crusts removed, cut into 3/4-inch cubes
1 anchovy fillet (optional)
1 tablespoon freshly squeezed lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon Dijon mustard
1/2 teaspoon freshly ground pepper
2 tablespoon extra-virgin olive oil
2 heads romaine lettuce (about 10 ounces each), outer leaves discarded, inner leaves cut into 1-inch-wide strips
1/2 ounce Parmesan cheese, shaved

Directions:
Preheat oven to 350 degrees. In a medium bowl, mash 1 garlic clove with the salt to form a smooth paste. Add bread cubes, and toss to combine. Spread cubes in a single layer on a rimmed baking sheet. Bake until crisp and golden brown, about 20 minutes, turning once.

Make the vinaigrette: In a small bowl, mince remaining garlic clove with the anchovy, if using, to form a smooth paste. Whisk in lemon juice, Worcestershire, mustard, and the pepper. Slowly whisk in the oil. In a large serving bowl, toss lettuce with vinaigrette and reserved croutons. Serve immediately, garnished with shaved Parmesan.

Summer Strawberry Salad

Summer Strawberry Salad I love this salad because of the healthy disease fighting antioxidants in the strawberries, nutrients in the lettuce and protein in the almonds. This salad packs loads of nutrients and it tastes great.

Ingredients:
1 cup of romaine lettuce
¼ cup of quartered strawberries
1 teaspoon of almonds
1 teaspoon of oil and vinegar

Directions:
To prepare this salad mix 1 cup of romaine lettuce, ¼ cup of quartered strawberries, a teaspoon of almonds, and a teaspoon of oil and vinegar. This salad serves one but you can adjust this accordingly and serve with a smile! Hope you enjoy!

Orange Onion Salad

Orange Onion Salad This salad is great because of the Vitamin C of the orange, and the immune boosting phytonutrients in the onions and lettuce! And the sweetness of the oranges really complements the onions well. Try it and you will see!

Ingredients:
1 cup of romaine lettuce
½ cup cubed orange
1 teaspoon of balsamic dressing

Directions:
To prepare this salad mix 1 cup of romaine lettuce, ½ cup cubed orange and a teaspoon of balsamic dressing.

Walnut Goat Cheese Salad

Walnut Goat Cheese Salad To get your omega 3s, protein and nutrients, try walnut goat cheese salad. The goat cheese and walnuts taste great in this salad. When I eat this salad I am reminded of dining at my favorite elegant eateries where this salad is usually served.

Ingredients:
1 cup of cut up romaine salad
1 teaspoon of goat cheese
1 half cup of tomatoes
1 teaspoon of walnuts

Directions:
To prepare this yummy salad, mix 1 cup of cut up romaine salad, 1 teaspoon of goat cheese, a half cup of tomatoes and a teaspoon of walnuts. Toss and enjoy!

Balsamic Salad with Chicken

Balsamic Salad with Chicken I love this balsamic salad because it tastes so good! This is a great dinner salad because it is so filling.

Ingredients:
1 cup of spinach lettuce mix
1/2 diced chicken
½ cup minced tomatoes
1 teaspoon of balsamic dressing

Directions:
To prepare this healthy salad that is packed with protein, mix 1 cup of spinach, lettuce mix with a half diced chicken, ½ cup minced tomatoes, and a teaspoon of balsamic dressing. Toss, serve and enjoy for dinner!

Apple Almond Salad

Apple Almond Salad I love the apple almond salad because of the natural fat burners of pectin and protein in this salad! This salad is yummy and it is ultra healthy! Hope you love it!

Ingredients:
1 cup of spinach mixed greens
¼ cup of almonds
½ cup of grape tomatoes
½ cup diced apples

Directions:
To prepare this salad combine 1 cup of spinach mixed greens, a quarter cup of almonds, a ½ a cup of grape tomatoes and a ½ cup diced apples. For dressing I either add a teaspoon of balsamic vinaigrette or a teaspoon of honey. Enjoy the loaded nutrients in this salad, protein in the almonds and fat burning, pectin in the apples.
