Potatoes are my all time favorite food and fortunately for me, there are so many ways to eat potatoes. This tuber is chock full of potassium and it also has fiber. Potatoes should always be in your kitchen because they are easy to prepare and give you so many options for a tasty meal or snack. Here are my favorite ways to eat potatoes, so go ahead and give them a try.

Potato Pizza
Ok, there are two ways to make this yummy meal. The first is to top a baked potato with your favorite pizza toppings. I like tomato sauce, pepperoni, mushrooms and black olives topped with melted mozzarella cheese. Your other option is to top a pizza crust with slices of potato and bake it until they are soft. Then top the pizza with chopped dill, fresh lemon juice and a dash of Parmesan cheese. Talk about one of the yummiest ways to eat potatoes you’ll ever find!
Potato Nachos
Oh yes, you read that right. Start with a greased baking dish and layer in thinly sliced potatoes and tomatoes and bake until they’re soft. Then top the potatoes with black beans, jalapeno slices, cheddar cheese and diced avocado. You might have to eat them with a fork, but the flavor of these potato nachos won’t disappoint you.
Potato Hummus
You can really ramp up the texture of hummus and make the flavor a bit more mild by blending it with the flesh of a baked potato. Simply put the two in the blender and puree until smooth. Stir in chopped cucumbers, tomatoes and red onions and eat with a spoon or as a dip for crispy pita chips.
Potato Packets
I love potato packets anytime I barbecue. They work great with steak, chicken or fish and are a delicious side. You might not even want to eat anything else. Spritz a large square of foil with cooking spray and pile it with cubed potatoes, onions and green bell peppers. Season the mixture with garlic salt and pepper. Wrap the foil around the potatoes to form a packet and grill for about 5 minutes on each side. Check the potato and return to the grill if needed.
Twice Baked Potatoes
If you love a baked potato, a twice-baked one will blow your mind. Cut a baked potato in half, scoop out the flesh and put it in a bowl. Add butter, sour cream, salt and pepper and stir well. Put the potato mixture back into the skins of the potato. Top with shredded cheddar cheese and put the potatoes in the oven until the cheese melts. Mind blown!
Potato Hash
This dish is great for breakfast, but you can eat it for lunch and dinner too. Start by coating a baking sheet with cooking spray. Scatter chopped potatoes, bell peppers, onions, mushrooms and zucchini on the tray and spray them with cooking spray. Season to taste with salt and pepper and roast at 450 degrees for about 30 to 45 minutes. Pile the hash in a bowl and top with a fried egg or two.
Potato Tacos
If you never know what to do with leftover mashed potatoes, here’s your answer. Heat the potatoes and put them in homemade or store-bought taco shells. Top with roasted poblano peppers, green chili, shredded lettuce and queso fresco. So good!
