Eggs are a great food to keep in your refrigerator because they are loaded with protein, a nutrient your body needs for most all of its functions. Eggs also contain choline, which is great for your vision. Despite past research, eggs aren’t unhealthy and can be part of a well-balanced diet. You don’t have to relegate yourself to an omelet though because an egg can bring out the flavor of other foods and give something a newness that makes mealtime exciting. Here are some foods that only get better with an egg on top.
Hashbrowns are one of my favorite things to eat with an egg on top. I fry the egg over medium so the white is set, but the yolk is still runny. Then I slide it on top of a huge pile of hashbrowns and top the whole thing with salt and pepper. When the yolk breaks over the potatoes, you have a tasty meal that can’t be beat.
2. A Burger
Ever eaten at a Red Robin hamburger restaurant? They are pretty popular where I live. Their specialty is a cheeseburger topped with a fried egg. Sounds a little strange, doesn’t it? But you see lots of breakfast meals that star meat and eggs so why not give this a try? You won’t be sorry – I promise you that!
Pizza with an egg on top is a gourmet trend that you might have seen on fancy restaurant menus. The egg is usually paired with a leafy green veggie such as arugula or frisee, then topped with cheese. If you want a pizza pie that is totally different than anything you’ve ever had, try one with an egg. You can order it a restaurant or try your hand at making one yourself at home.
Sure, you’ve probably seen a salad with hard-boiled eggs, but have you ever tasted the delight of having a fried egg on your greens? Again, it tastes wonderful with fancy greens and when the yolk bursts over the veggies, you get a tasty and filling meal that you’ll want to eat every single day. Don’t forget the salt and pepper.
5. An Avocado
Avocados are a creamy and delightful thing to eat at any meal. If you cut one in half, you’ll see that once you remove the pit, you have a pretty good sized crevice that is perfect for an egg. Crack the egg in there raw, then bake the avocado until the egg sets. Top with salt, pepper and spicy salsa and you have a breakfast that will make getting out of bed totally worth it.
6. On Asparagus
Asparagus is a veggie that appears on many gourmet plates. Topped with an egg, you have an even better presentation. Leery? Think about this – you eat hollandaise on asparagus, right? It’s mostly made from eggs. Try a fried egg on top of your asparagus and I think you’ll agree that you’ve found a new favorite side dish.
7. On a BLT
Bacon and eggs just go together, right? So next time you whip up a bacon, lettuce and tomato sandwich, slide a fried egg in there too. Make sure you have a runny yolk for a flavor burst that you will not be able to believe. Grab a few napkins because this one is messy.
