1 oz orange liquor
Instructions:
Combine the honey, water and figs in a small saucepan. Bring to a simmer over low heat and whisk continuously until the honey is melted and the figs begin to soften. Add the thyme and let simmer for an additional 10 minutes, stirring often. Remove from heat and let the mixture sit for a few minutes. Remove the thyme sprigs from the honey mixture and use a food processor or immersion blender to blend the honey and figs into a smooth syrup. 1 cup heavy whipping cream
4 cinnamon sticks
ΒΎ tbsp. pure vanilla extract
1 tsp. grated nutmeg
5 eggs
ΒΎ cup white sugar
Β½ cup caramel syrup
1 tbsp. sea salt
Instructions:
In a large saucepan, combine milk, cream, cinnamon, vanilla, and nutmeg. Carefully bring to the boil over a medium heat. As soon as you see it bubbling, remove from heat. Allow to sit for at least 5-10 minutes to steep. In a large stand mixer, beat eggs and sugar on medium high/high until fully combined. Pour egg mixture into the cooled milk and whisk quickly until fully combined.

Add caramel, sea salt, and rum (if using). Continue whisking to fully combine. When you're ready to serve, beat the egg whites on high until foamy peaks form. (this is optional).

Pour the eggnog into the glass leaving a bit of room at the top. Top with fluffy egg whites (optional). Garnish with nutmeg and caramel sauce.
