It is best to have the meat on the bottom so it can receive direct heat from the grill to cook properly.

Salt & pepper to taste.

Wrap up packet and place on a hot BBQ or over a fire for 15-20 minutes or until meat is thoroughly cooked.

1 pound ground beef
2 large yellow onions

Directions:
Cut your onions in half. Carefully remove the outer first 3 layers of onion and set aside.

Fill each onion layer with meatloaf mixture, top with ketchup, reassemble onion layers and place on an oiled sheet of aluminum foil.

Wrap your onion balls with aluminum foil and twist the top to seal. Be careful not to puncture the aluminum foil.

Place meatloaf onion balls on hot coals (not directly in the flames) and cook for about 30 min. Keep rotating and checking the progress on whether they are cooked through or not.

4. Pizza Log

Ingredients:
1 store bought pizza dough
1 8oz can pizza sauce (or 8oz pasta sauce)
2 cups mozzarella cheese
1/2 package of Hormel Turkey Pepperoni
sauteed veggies of your choice - optional
1 Tbsp dried basil

Using a quality brand like Hormel Turkey Pepperoni makes this dish less greasy and healthier.

Directions:
Roll out pizza dough to form a rectangle. Spread pizza sauce over top of dough leaving 1 inch space on edges. Top with 1 cup cheese, and additional toppings and remainder of 1 cup cheese, add basil.

Roll pizza up to form a log and tuck edges in. Wrap in thick foil. Place in freezer until ready for camping trip.

Place pizza log, still in its foil on hot grill or fire pit.

Cook for about 10-15 minutes flipping over and cook an additional 10-15 minutes.

5. Orange Blueberry Muffins

Ingredients:
Packaged blueberry muffin mix
Oranges

Directions:
Stir up a box of blueberry muffin mix according to the package directions.

Cut an orange in half and scoop out all the orange flesh. Save orange flesh to eat as a healthy snack!

Fill one half of emptied orange with blueberry muffin mix.

Cover the filled orange half with the empty orange half and then wrap in three layers of aluminum foil.

Throw them in the fire.

Keep turning the aluminum balls over and over in the fire, every minute or so. It usually takes about 10 minutes, but go ahead and pull them out and check them once in awhile until they are firm in the middle.

1 pound large, peeled shrimp
1/2 stick of butter
1 cup chopped parsley

Mix 1/2 stick softened butter, 1 cup chopped parsley, 2 chopped garlic cloves, and salt and pepper.

Toss with the juice of 1 lemon, 1 pound unpeeled large shrimp and a big pinch of red pepper flakes.

Divide between 2 foil packets. Grill over campfire for about 8 minutes.

Add small dabs of butter on top of each of the slices. Salt & pepper to taste.

Wrap potato in double layer of tin foil lightly sprayed with cooking spray.

Place on a hot BBQ for 20+ minutes...until potato is hot and cheese, ham & bacon have melted together and it looks toasty and good!
