Last year was a wreck for my health. One thing I love binging on is breakfast food! Especially bowls of hashbrowns, sausage, bacon, and a bunch of cheese..... not very good for my health. So this year I am setting out to create my own versions of the food I crave in a healthy fresh new way! Here is my recipe for a healthy breakfast skillet 🍳.
INGREDIENTS 🥑🍳
1 small red potato
1/4 zucchini
1/2 Red pepper
4-5 white mushrooms
Handful of spinach
1/2 avocado
Chopped green onions.
Spices to taste
Paprika
Garlic salt
Pepper
Dice your potato, pepper, and zucchini into cubes and slice your mushrooms.
COOKING THE DAMN THING 🍳
Cook on medium heat. First, throw a dash of olive oil in the pan and add diced potatoes, paprika, garlic salt, and pepper to your liking and stir occasionally until the potatoes are golden brown.
Add zucchini and then cook, still on medium heat for about 2-3 minutes.
Add red peppers and mushrooms and cook until the mushrooms have shrunk and look ready, still stirring occasionally.
Lastly, add the spinach, if you’d like to add more spice now would be the time.
As your spinach cooks, grab another pan and fry your egg to your preference.
Once your egg is done take the skillet off the stove and place in a bowl, egg on top. Add your chopped green onions and sliced avocado.
