This recipe for grilled turkey burgers satisfies your craving for a burger without the guilt. Turkey makes the leanest possible burgers and minced turkey is readily available in supermarkets but if you want to avoid the potential gristle and bits of fat in the pre-minced product buy the turkey strips designed for stir frying and pulse them in your food processor to chop them up. Don’t leave out the roasted aubergine – it really does make all the difference. The calories in this recipe do not include a bun or other accompaniments so remember to add those in.

Large mixing bowl
375g minced lean turkey
1 large aubergine
3 tablespoons tomato purée
½ tablespoon very low fat fromage frais
1 garlic clove
2 tablespoons fresh breadcrumbs
6 spring onions
Salt and pepper
Prick the aubergine in several places then bake in the oven at 180°C for 40 minutes until it has collapsed and the centre is soft.
Remove and allow to cool.
When cold, halve the aubergine and scoop the flesh into a large mixing bowl and discard the skin.
Peel and crush the garlic clove and add to the mixing bowl
Chop up the spring onions and add to the bowl.
Chop the parsley until you have roughly 2 tablespoons and add this to the bowl.
Put all the turkey, fromage frais, tomato purée and breadcrumbs into the bowl with a few dashes of Worcestershire sauce and salt and pepper to taste.
Mix until all the ingredients are well combined.
If the mixture is too loose add a few more breadcrumbs.
Form into 4-6 burgers.
Grill until the turkey is well cooked right through to the centre – about 5-7 minutes each side.
Serve immediately with your favourite healthy fixings..
