I received an e-mail today from a popular dollar store with the recipe for chicken enchiladas. I thought interesting, but I am not much of a chicken fan. Also, such recipe called for simmering and cooking and all that fuss. So, I hopped on YouTube to find out something maybe different or even better and found this recipe. Salsa, cream of mushroom, cheese, etc. layered with the tortilla seem total yum. When I first thought of enchiladas, I thought there would be wrapped tortillas gathered in a crockpot. But I like this recipe... kind-of like a layered lasagna version of an enchilada.
All it takes is an hour to 1 hour and a half to cook in the crockpot. So, throw in the ingredients and go about your business.
Obviously, all ingredients may be bought at the dollar store! Not only good for lessening stress and satisfying your stomach, but also good for your wallet!
