My slow cooker has saved my life on days when I know I’ll be home late and won’t have time to make a healthy dinner. By getting your stuff going in the morning, you can come home to a delicious and nutritious meal at the end of the day. That saves you from hitting the drive-thru, which can save your health and your pocketbook. You know you can cook roast and chicken in your slow cooker, but there are some other tasty things you can use it for too. Here are some great ideas to get you started.

Pizza Pizza is a crowd pleaser, but can take some time when you make it from scratch. This is where your Crockpot comes in. Coat it with cooking spray, then spread some dough out and up the sides. Top it with tomato sauce, healthy toppings like tomatoes, sliced chicken or bell peppers, and some cheese. When the dough starts to pull away from the sides, dinner is ready.

French Toast If you’ve never had French toast made in the slow cooker, you are in for a treat. Again, coat it with cooking spray first to prevent sticking. Then pile in cubed bread, whipped eggs, cinnamon, cream, fresh blueberries and reduced fat cream cheese. Cook until the entire mixture is set and serve it warm with Greek yogurt on top.

Overnight oatmeal is super delicious and is a really healthy way to start your day. Place the oatmeal in the slow cooker with about double the liquid. For example, for every cup of oats, add two cups of water or milk. Season the mixture with cinnamon and toss in some frozen berries. Set it on low and when you wake up in the morning, you’ll have a healthy and tasty meal that you’ll feel great about serving to yourself and your family.

Got a craving for Mexican food? Cook some enchiladas in your slow cooker and you will have the perfect meal waiting for you at home to satisfy that craving. Place a layer of salsa or green chile on the bottom of your Crockpot. Then roll your favorite fillings inside corn tortillas. Chicken, veggies or beef and cheese are all really great ideas. Then place them on top of the sauce and cook until they’re piping hot and ready to eat. Top with more chile, guacamole, shredded lettuce and diced tomatoes. Yum!

Egg Casseroles

Not only can egg casseroles be a healthy choice for breakfast, lunch or dinner, but they are super easy to make in the slow cooker. Layer in breakfast sausage or bacon, hashbrowns, diced bell peppers and onions and cheese in your Crockpot. Then pour in whipped eggs to cover. Season with salt and pepper and then cook on low until the eggs are set. Serve with fruit salad.

A Rack of Ribs I cook ribs in the Crockpot all the time and they taste just as good as they do in a smoker or the oven. Place the ribs right into the slow cooker, slather them with barbecue sauce and season with your favorite rub. Cook on low all day and you’ll have an award winning meal when you get home after a long day.
