This recipe for Gujarati Carrot Salad makes a refreshing dish. If you love Indian food but are abstaining because you are on a low-fat diet or following a healthy eating regime then this salad will be just the ticket. Serve it with a piece of lean grilled meat seasoned with some curry paste and you’ve got those beautiful aromatic Indian flavours you’re craving.
Preparation time: 5 minutes + cooling (5 mins) and chilling time (30+ mins)

Serves: 4-6 people

1 tablespoon vegetable or groundnut oil
½ tablespoon black mustard seeds
½ tablespoon cumin seeds
1 fresh green chilli
½ teaspoon sugar
½ teaspoon salt
1 ½ - 2 tablespoon lemon juice
Pinch ground turmeric
Chop and deseed the chilli.
Roughly grate the carrot or chop into really fine julienne.
Heat the wok for 30 seconds then add the oil swirling it around so it’s not just a puddle.
Add the mustard seeds, cumin seeds and stir fry until the mustard seeds begin to pop.
Remove the wok from the heat and add the chilli, sugar, salt, and turmeric.
Leave to cool for 5-10 minutes.
Put carrot in a bowl and tip on the contents of the wok.
Add the lemon juice.
Toss together and adjust seasoning if required.
Put in fridge to chill for at least 30 mins.
Toss again before serving.
