7 Best Vegetables for Grilling This Summer ...

The best vegetables for grilling are likely many you already love and use regularly. Grilled veggies make an awesome side dish for summer meals or even an afternoon snack. They’re also so easy to add to meals for leftovers, whether it be a savory breakfast, tossed over a salad at lunch, or paired with some whole grains for dinner. Next time you’re looking to fire up the grill, choose these vegetables for grilling and see which ones you enjoy the most.

Mushrooms

Mushrooms Mushrooms are one of my favorite vegetables for grilling and they’re an awesome replacement for meat. You can use any kind of mushrooms you like so try out all different kinds to see which ones you enjoy the most. Portabellas can be grilled whole on the grill to use for the “meat” in a burger, or you can opt to use button mushrooms to use for kabobs.

Tomatoes

Tomatoes Tomatoes (though technically a fruit) are one of the best foods to grill since they contain natural sugars. Anytime you grill or roast a veggie that contains a natural sweetness, it takes on a caramelized flavor that is downright delicious. You can use beefsteak tomatoes, heirloom tomatoes, or even grape tomatoes if you fancy.

Zucchini

Zucchini fries are one of my favorite side dishes to make in the summer. Zucchini is nice and firm so it holds up well to high heat. Zucchini is very low in calories, high in potassium and Vitamin C, and takes on a natural sweetness when grilled. I recommend grilling it with black pepper, Italian seasonings, and a squeeze of lemon for a top-notch flavor.

Sweet Potatoes

If you’re a fan of sweet potatoes as I am, try grilling them in the form of fries or cut them in half before grilling them face down. They’re awesome as a replacement to french fries and a much healthier option too. Their natural sweetness is bursting with flavor so you don’t even need to season them unless you just want to.

Corn

Corn is naturally sweet and a great source of certain B vitamins. It’s delicious grilled whole on the cob and makes the perfect accompaniment to any salad or entrée of your choice. Take advantage of fresh corn in summer when it’s in season and tastes best.

Summer Squash

Summer Squash Summer squash, also known as yellow squash, is another popular vegetable for grilling you should give a try if you haven't already. Summer squash is also a rich source of vitamin B6, potassium, fiber, and water. It doesn’t have much flavor raw, but when grilled it tastes slightly sweet and savory, making it perfect for grilling.

Onions

Onions Onions are full of natural sweetness and taste especially hearty when grilled. They’re fantastic cut into wedges for kabobs on the grill or even grilled into halves to serve as a side dish. Just remember to have some mints on hand if you’re going to enjoy them since they still stink, grilled or not!

You can truly grill most any veggie you can think of but be aware that all vegetables have different grilling times depending on their water and starch content. Aim for 3-4 minutes for most, except for items like potatoes or squash, which could take up to 6-7 depending on the size of their cuts. What’s your favorite vegetables for grilling?
