Personally, I do not know anything about the Keto diet. However, the diet is the rage these days. There are magazines boasting the benefits, books, and more books being published about it, websites being devoted to it, etc. So, there must be something good about it.
Eggs are not solely meant for breakfast. Spinach is not solely meant for dinner. Put them together for a super healthy meal anytime.
I think I would put the ingredients in a 9 X 13 Pyrex and microwave it, for a quick meal yet a healthy meal.
