Fixing a tasty, nutritious meal for dinner, whether it's for your family, your friends, or just yourself, can be difficult – unless you become a connoisseur of quick 30 minute meals! I work all day, even though I do it at home, and taking time out to prepare something that takes a lot of time and energy just isn't something I can do every day. I love having dinner all done and delicious, ready for the Better Half to enjoy after a long, hard day in the octagonal cubicle, but sometimes it's got to be quick. 1. Sauteed Shrimp on a Warm Black Bean Salad

I love shrimp and black beans (and black bean salads!), so this is one of my favorite 30 minute meals. It only takes 25 minutes, as long as you make sure to buy shrimp that are already shelled and cleaned! The black beans salad gives this dish a delicious, earthy kind of flavor, but there's something wonderfully refreshing about it too, thanks to additions like lime juice and fresh cilantro.
2. Sliders with Caramelized Onions and Horseradish Mayo

Because I believe horseradish is the best thing ever and add it to any recipe I can, and because I think burgers in any form are the greatest thing since sliced bread, I'm all over this quick meal. Even with the caramelized onions, this is one fast dish, and it's so delicious! The best part is that you can pretty much make it any way you want – add your own flair and your own favorites, and you'll still come in under the time limit!

Nicoise is the perfect dinner salad, not to mention a must for anyone who loves French food. It's kind of like a Cobb salad, but done up in a nice Nice way (see what I did there?), but you can adapt it to suit your palate. For instance, while I love the potatoes, tuna, and green beans, I can generally do without the anchovies. This recipe is pretty true to form but, like say, you can fix it to fit your own tastes.

Who says sandwiches aren't good for dinner? This is one of the heartiest 30 minute meals I've ever had the pleasure to try. Flank steak, grilled onions, fresh, sweet tomatoes, yum! I don't use arugula, though, I've never gotten a taste for it. I do have to recommend that, however you change the recipe, keep the sourdough bread! So good!
6. Tomato Bruschetta with Sweet Cherries

Bruschetta is a great dish when you don't have a lot of time and/or want something light for dinner. The BH makes excellent bruschetta, but this one is superb as well. I think it's the addition of the cherries, they give it this sweet but tart little zing that makes all the difference.
7. Pork Chops Marsala

At first I didn't think something like this could possibly qualify as one of the 30 minute meals, but let me assure you, it definitely does – and it's so good! Plus, it doesn't have all the calories and fat usually associated with any kind of Marsala dish. That's partly due to using boneless, trimmed pork loin chops. I love everything about this dish, right down to the entire pound of asparagus – my favorite vegetable!
Some of these aren't even 30 minute meals – they take way less time! It's nice to know you can make something that tastes really good without taking a lot of time out of a packed schedule. That's my problem, because as much as I love to cook for myself, my family, and my friends, sometimes 30 minute meals are just the most practical choice.
