It is a natural sweetener – a form of sucrose - made from the sap of the flower bud of the coconut palm tree. After processing (in as natural way as possible), the result is a soft, fine brown sugar. So yes, it is a sugar but it is a form that releases energy more slowly and therefore is a better choice than other, more refined and processed sugars.
