I’ve tried it myself and it turned out really good. The recipe below is a serving of 48 cookies and it also includes the measurements if you’d rather use good old-fashioned white sugar. 2 ¾ Cup all purpose flour
2 Tsp. baking soda (1 Tsp. if with sugar)
2 Cup butter, softened
1 Cup honey or 1 ½ cup white sugar
1 Tsp. vanilla extract
Preheat the oven to 375 degrees Fahrenheit. In a small bowl, mix all of the dry ingredients. In a large bowl, cream the butter with honey or sugar until smooth. Then beat in the egg and the vanilla. After beating, slowly add the dry ingredients to the batter. Once you are done mixing up the batter, round it into balls and place on a baking sheet. Bake for the cookies for 8 minutes and then let them cool, remaining on the baking sheet for two minutes outside of the oven. Finally, transfer the cookies to wire racks to completely cool down.
