They’re also so easy to add to meals for leftovers, whether it be a savory breakfast, tossed over a salad at lunch, or paired with some whole grains for dinner. Zucchini fries are one of my favorite side dishes to make in the summer. Zucchini is nice and firm so it holds up well to high heat. Zucchini is very low in calories, high in potassium and Vitamin C, and takes on a natural sweetness when grilled.
