I'm pretty old and I like trifle and I can assure you that trifles these days are nothing like those from my childhood and earlier years. A traditional British trifle started with a layer of trifle sponges or Madeira cake, soaked in sherry (optional), layered with tinned fruit cocktail, covered with a layer of jelly - usually made with the juice from the fruit cocktail, followed by a layer of thick custard, topped with a layer of either cream or something called Dream Topping. There was the ubiquitous finish of sprinkles (hundreds and thousands) which after a day sent the cream topping all sorts of lurid colors as the dyes leached. Sounds delightful doesn't it? Trust me - generations grew up on this. Today though, trifles are delicious concoctions and the term has come to refer to any desert that consists of layers of sponge/cake, fruit and cream/custard.
