When you are following a low-fat diet, vegetables are a major component but eating them just steamed or boiled can get rather tedious. This recipe for broccoli with walnuts jazzes up the humble green vegetable. Broccoli is a fabulous vegetable packed with nutrition and should only be cooked lightly to keep that vibrant green colour. Adding in a few walnuts not only introduces a different crunch and flavour but they too are a little mouthful of healthy goodness.

Sharp vegetable knife
Ingredients:
Broccoli spears (if available), or a head of broccoli cut into florets
40 gram (1/2 packet) of walnuts
2 tablespoons (30 ml) olive oil
Salt and freshly ground pepper to taste
Directions:
Steam the broccoli until tender and place warm in serving plate
Roughly chop the walnuts and heat in a small dry frying pan for 3 minutes
Add the olive oil to the pan and fry gently for 2 minutes
Remove and pour over the broccoli
Season to taste
Serve immediately
