Tropical Fruit Slaw

Tropical Fruit Slaw Who says slaw recipes have to be savory? I know people think that fruit salad is a bit boring as a dessert, but if you love the taste of fresh tropical fruit, change up the usual mélange of chunks to make a gorgeous slaw. This recipe comes courtesy of UK cook Nigel Slater.

Ingredients:
4 servings
• 2 ripe mangoes
• 1 small pineapple
• 8 oz watermelon
• 1 small charentais melon
• 1 large orange
• 1 firm, ripe banana
• 1- 1½ inches fresh ginger root
• 1 stalk lemongrass

Directions:
Peel and cut the mango into long matchsticks. Do the same for the pineapple, melon and watermelon – removing any seeds. As you’re slicing up the fruits conserve as much juice as possible – tip it from the chopping board into a small saucepan. Toss all the shredded fruit together in a large bowl. Peel and finely grate the ginger and add to the saucepan containing the fruit juices. Smash the lemongrass stalk and tuck into in with the juices and ginger. Juice the orange and add that to the pan. Put the pan on a moderate heat until just before it begins to boil. Remove and allow to infuse for 15 minutes. Chill over a bowl of ice. When cooled, pour through a sieve over the fruit mix. Cover the bowl and chill for a couple of hours. When ready to serve, peel and cut the banana into slices and add to the mix. Enjoy!
