I know, I was surprised too. Anyway, the bonus is that we’ve discovered that homemade frosting recipes taste much better and you can make just as much or as little as you need. 1. Creamy Cream Cheese Frosting

Creamy Cream Cheese Frosting Cream cheese is one of my favorite ingredients in homemade frosting recipes. It lends such a yummy flavor and a texture that can’t be beat. It’s also white, so you can easily make it any color you want. Use it on your next cake and I guarantee rave reviews.

Ingredients:

3 ounces cream cheese
1 ¾ cups confectioners’ sugar
8 ounces frozen whipped topping, thawed

Directions:

Beat the cream cheese and the sugar until smooth. Gently fold in the whipped topping until well combined. Use food coloring to tint.

Creamy Chocolate Frosting No list of frosting recipes would be complete without a chocolate one, right? You can’t color it with food coloring, but it sure makes up for it with the taste. Chocolate frosting is especially delicious on chocolate cake.

2 ¾ cups confectioners’ sugar
6 tablespoons cocoa powder, unsweetened
6 tablespoons butter, softened
5 tablespoons evaporated milk
1 teaspoon vanilla

Directions:

Sift together the sugar and the cocoa and set aside. In a bowl, cream the butter until very smooth. Beat in the sugar mixture gradually, alternating with the evaporated milk. Add the vanilla. Beat the frosting until fluffy. Use more milk to sugar, as needed, to thicken or thin the frosting.

Marshmallow Icing This is perfect for cakes and cupcakes. The consistency is wonderful and the marshmallows add a unique flavor you won’t be able to find just anywhere.

Ingredients:

2 egg whites
1 ½ cups white sugar
1/3 cup cold water
1 ½ teaspoons corn syrup, light
1 teaspoon vanilla
1 cup mini marshmallows

Directions:

In the top of a double boiler, place the egg whites, sugar, water and corn syrup. Mix well. Place over boiling water and beat with an electric mixture for 7 minutes or until peaks form. Remove from heat and add the vanilla and marshmallows. Beat until melted.

I know I can't be the only person who bought icing in the tub and ate it straight with a spoon? Looking back, the tub wasn't refrigerated, on a shelf? Since those days of eating icing right outta the tub, I've wanted to make my own, tada, here it is...yea!
