Identifying meals to cook in bulk is one of the easiest ways to save yourself time and money. We are constantly being told that convenience food is bad for us. The people that promote that message aren't lying, but many of us don't have the time to cook something from scratch every day. There are some meals to cook in bulk that can help you stay healthy (most of the time, nobody's perfect. Being perfect is boring...) and save money at the same time.
Almost any form of risotto is one of the best meals to cook in bulk. After you have the risotto rice, some stock, and some cheese, pretty much anything can go in it to make it taste great. Most recipes call for wine. I usually dodge that, because wine doesn't last long in my household. A lot also call for parmesan. Trust me, pretty much any cheese works just as well.
Bolognese sauce turns into almost anything. I was discussing the general amazingness of bolognese sauce with a friend the other day. We sort of realized that it only tastes better each time you reheat it. Traditionally this is made with minced beef, but turkey or Quorn work too. So you don't get sick of it, you can use it as part of a chili con carne, in tacos, in burritos...I once ate mine in an amazing sandwich. It just doesn't get boring.
Pizza isn't always unhealthy. Honestly, it isn't. The unhealthiest aspects of pizza are the grotesque amounts of preservatives used in the frozen forms, sugary crusts, and fatty cheese. You can adjust all of that by making your own dough and using low-fat cheese. Add on loads of vegetables and you are onto a healthy winner. Try making a few at once and freezing them. It's cheaper and healthier than buying them from a grocery store.
I went to Ghana in 2012 and fell in love with the place. While I was there, I ate a lot of meals that were new to me. Jollof rice was one of my favorites, because it was so easy to make! Much like risotto, once you have your basic ingredients you can add almost anything to it to make a healthy meal. If you're anything like me, you can go all out on the spice!
Let's continue with the international theme here. Goulash is a traditional Hungarian stew that you can eat with potatoes, rice, or even pasta. I personally find the pasta version a bit odd. When I was first experimenting with Quorn mince, I made an amazing Goulash. Using vegetarian substitutes made it extra healthy.
Fish cakes are ridiculously easy to make. I love fish, but I am not a massive fan of fishy fish. I know that seems odd, but I basically mean I like anything up to salmon, and that's where my love for fishy tastes stops. Fortunately, salmon tastes awesome in fish cakes, especially when it's combined with lime.
Last, but not least, there is falafel. Every time I eat it, I think of Ross from F.R.I.E.N.D.S and how he apparently looked like the falafel guy. This should be easy to make, but I have a hard time getting it right. If you have awesome falafel skills, congrats. I envy you.
I have read about some amazingly organised people who cook once a month and that's it. I have occasionally pulled off cooking just once a week. I quite enjoy cooking, so I am in no mad rush to squeeze all my endeavors into one day. If you cook something in bulk, what is it?
